Healthy pancakes with a delicious, spiced tea flavor… YES PLEASE!

These pancakes are so. Freaking. Good. They taste like a fancy, delicious breakfast or treat you would get in a beautiful New York cafe. That has brick walls and big chandeliers hanging from the ceiling. With copper or gold forks and knives. This is kind of how I imagine my fancy cafe.

I’ve made these a couple of times for family brunches and breakfasts and things like that, not in a beautiful cafe, but within a couple of minutes they were GONE! There wasn’t a crumb left! My family is pretty health-conscious, so whenever there’s something that tastes really good and is healthy we tend to be all over it!

I love these healthy pancakes, when I eat them it feels like I’m being really decadent and having a treat! BUT I’m being healthy. This is really the only way I can stick to healthy eating if it’s boring and plain tasting I can’t handle it.)

These have the slow-digesting carbs I need to keep my body and brain fueled and give me some energy for the day. Plus protein to help my body do all the things I need to. It helps keep me healthy and recover from whatever nonsense I got into the day before. Plus it has good fats for a healthy brain and cells. It also gives me what I need to actually get my butt in gear and get going for the day.

I am NOT a morning a person so having these little disks of gold helps me actually function in the morning. Plus I really love food so a delicious breakfast of healthy pancakes is one of the best ways to get me out of bed, seriously I get excited for breakfast almost right after dinner.

I’ll make these whenever I am having a rough morning or when I want to “escape” my day to day nonsense. Even it’s just for just a minute, and pretend I’m back in a cafe in Zurich. Eating my pancakes, and sipping my tea with almost no responsibilities or concerns.

Healthy Pancake Recipe

  • 1/3 cup rolled oats
  • 1/2 banana
  • 1 egg
  • 1 tsp maca powder
  • 1 tsp baking powder
  • a pinch of pink Himalayan salt
  • a pinch of cinnamon
  • 2 Tbs worth of strong spiced tea + 2 tsp worth of the tea leaves
  • *Optional: 1 scoop of collagen OR protein powder

Cooking Instructions

Steep the tea for at least 25 minutes (you can also do this overnight.) I like these reusable silicone teabags. When the tea is strong and cool add it into a blender (I use the Ninja blender cup) with all the other ingredients and blend until smooth. Let everything rest for a couple of minutes.

While the batter is resting and thickening up, heat a pan to a medium/low heat with about 1 Tbs. of oil (I like using coconut oil or salted grass-fed butter). When the oil melts, pour the batter into the pan to form the size of pancakes you like.

Cook on low until bubbles begin to form on the top of the pancake. Flip and cook on the other side for another 3-4 minutes. I top mine off with a drizzle of maple syrup or raw honey!

Alright, here we go. To start oats contain soluble fiber which is really important for your gut health and lowering/ keeping cholesterol levels in a healthy range.

Oats also have avenanthramides (that are only found in oats) that have been shown to help protect your heart! Oats are also higher in protein and fats than most other grains. They also contain a lot of minerals and vitamins: including calcium, iron, vitamin B1, B2, and B3; these all help with overall health and keeping your body running at its best. Oats also have a lot of phytochemicals. Chemical compounds that affect your overall health and are not considered vitamins or minerals. These help with a lot of different things but play a major roll in helping your body absorb all the other nutrients in your food.

The tea, depending on which one you decide to use, have been found to have different health benefits, Green tea has been shown to help with weight management, fat loss, and increasing metabolism. Black tea has been shown to help with your heart’s health. I like the taste of the black tea in the pancakes better but you know.. to each, their own do what makes you happy!

Maca powder and cinnamon are great for your body too! Maca helps balance hormones, gives energy, protects the brain and cinnamon helps control blood sugar and is good for your heart. Raw honey is an electrolyte and both honey and maple syrup contain minerals!
